1 Spicy Jalapeño Cali’flour Pizza Crust
6-8 eggs (use more eggs depending on the size of pie dish)
½ c shredded Pepper Jack Cheese
1 4 oz can roasted green chilis
1 c wilted and chopped spinach
1 tomato chopped
1 c sliced mushrooms
¼ c chopped red onion
1 T olive oil
1-2 T chopped green onion
Fresh ground pepper
Preheat oven to 375º. Place thawed Cali’flour Crust in 7” pie dish. Bake for about 5-7 minutes. Remove from the oven.
Sauté onion and mushrooms. Whisk eggs, add salt and pepper. Fill the quiche with egg mixture, veggies, and shredded cheese. Bake at 350º for about 20-30 minutes or until eggs set. Serve garnished with a sprinkle of green onions and salsa if desired. Enjoy!
