Pumpkin Thyme "Flatbread"


1 Plain Cali’flour Crust
¼ c shredded white cheddar
2 T pumpkin puree
2 T ricotta cheese
1 c fresh spinach
Fresh thyme chopped
Kosher salt and pepper

Prepare Pizza Crust

Pre-bake the Cali’flour Crust as instructed in an oven at 375-400 on a vented pizza pan, pizza screen, or on a non-stick cookie sheet lined with parchment paper for 12-14 minutes. Remove from the oven and let rest a minimum of 10 minutes.

Prepare “Flatbread”

Steam spinach in microwave for about 1 minute. Squeeze and drain off any excess liquid. Chop spinach and combine with ricotta. Set aside.

Lightly smear the pumpkin puree on prepared crust. Sprinkle with cheddar and then add ricotta in small drops over crust. Scatter with fresh thyme and salt and pepper to taste. Return the pizza to the oven set on high broil for 2-4 min to melt the cheese. Remove from oven, let rest then serve. Enjoy!
