Ingredients
4 Cali’flour Foods Flatbreads
1 lb ground turkey
½ c fresh spinach leaves chopped
⅓ c sun-dried tomatoes chopped
¼ c red onion minced
¼ c feta cheese crumbled
2 cloves garlic pressed or minced
1 egg whisked
1 T olive oil
1 t dried oregano
½ t each Kosher salt and freshly ground black pepper
Bibb lettuce leaves
Sliced red onions
Feta cheese crumbles
½ cucumber halved with skin and seeds removed
¾ c low-fat plain Greek yogurt
2 cloves garlic pressed or minced
1T red wine vinegar
1T fresh dill minced
Pinch of kosher salt and freshly ground black pepper

Prepare Flatbreads
Pre-bake the Cali’flour Flatbreads as instructed in an oven at 375-400 on a vented pizza pan, pizza screen, or on a non-stick cookie sheet lined with parchment paper for 12-14 minutes. Remove from the oven and let rest for a minimum of 10 minutes.
Prepare Burgers
In a large bowl, add the ground turkey, spinach, sun-dried tomatoes, red onion and feta. In a small bowl, whisk together the garlic, egg, olive oil, dried oregano, kosher salt, and freshly ground black pepper. Add this to the turkey meat and mix to combine. Divide the burger mixture into 4 patties and place on a plate to refrigerate for a min of 30 minutes. Cook burgers about 5 minutes on each side on a non-stick grill pan over medium heat (be sure to watch the burgers and monitor your heat as the burgers will brown quickly if the heat is too high).
Prepare Tzatziki Sauce
Grate cucumber and place it in a paper towel. Press the water out of the shredded cucumber and place in a medium-size bowl. Add the yogurt, garlic, red wine vinegar, fresh dill, kosher salt and freshly ground black pepper and mix well. Cover and refrigerate for 30 minutes.
Assemble Burgers
On prepared flatbreads, place burger patty then slather with tzatziki sauce and garnish with lettuce leaves, red onion, and feta crumbles. Serve and enjoy!
