Ingredients
2-3 Cali’flour Crusts made into Cali’Crisps
16 oz cream cheese, softened
1 c cheddar grated
1 c smoked gouda
3 green onions, chopped
1 t garlic powder
1/3 c toasted almonds, finely chopped
4 slices of bacon, cooked crisp and crumbled
1 slice of mozzarella cheese

Prepare Cali’flour Crisps
To start our keto cheese ball recipe, pre-heat oven to 400. Cut Cali’flour Crusts into desired pieces and place on vented pizza pan or screen in a single layer. Bake 12-14 minutes until crisp. Remove from oven and let rest to set up and firm.
Prepare Cheese Ball
In a food processor, combine softened cream cheese, grated cheeses, garlic powder and 3 tablespoons of chopped green onion. Blend until light and fluffy. On a serving tray, transfer cheese mixture to the center and form into a “football” shape. (If too soft, cover with plastic wrap and place in the refrigerator to set up for 30 minutes or so. It can also be made the day before and stored chilled overnight.) Remove cheese ball from cooler and cover with chopped almonds and bacon. Press firmly to adhere. Cut mozzarella to make the laces of the football: one long strip for the seam and additional smaller ones for the cross laces. Line garnish accordingly down center of cheese ball. Top with remaining green onions and serve with Cali’Crisps and favorite veggies. Enjoy our robust keto cheese ball recipe!
