Guacamole Buffalo Chicken Pizza

Ingredients 

For the Pizza:

Your choice of Cali'flour Foods Crust
1 TBS olive oil
1/2 pounds boneless skinless chicken breast, cut into 1 inch pieces 
1/4 TBS salt 
1/4 tsp pepper 
2 garlic cloves minces 
2/3 buffalo wing sauce 
2 TBS unsalted butter 
1/4 ranch dressing 
12 oz fontina cheese 
6 oz crumbled gorgonzola cheese 
4 green onions thinly sliced 
1/2 cup cilantro chopped 
3 TBS chopped chives

For the Guacamole: 

2 avocados 
3 TBS chopped cilantro 
1 lime juiced 
1/4 tsp salt 
1/4 tsp pepper

Guacamole Buffalo Chicken Pizza

Instructions

For the crust, preheat the oven to 400 degrees F. Use a vented pizza pan and place in the oven while preheating. Once the oven is ready, take out the pan and spray with nonstick cooking oil. Cook crust for 10-12min watching carefully. Take out of the oven and let cool for 10 minutes before topping. 

While the crust is cooling, heat a large skillet over medium-high heat and add olive oil. Toss chicken with salt and pepper, then add to the skillet and cook until browned on all sides, about 10 minutes. Once cooked through, add the garlic and stir for 30 seconds, then add in buffalo wing sauce and butter. Stir to coat.

Spread the crust with the ranch dressing. Cover with most of the fontina cheese. Add the chicken on top, half of the gorgonzola cheese and 2 of the sliced green onions. Add the remaining fontina on top. Drizzle with some wing sauce!

Place the pizza back in the oven and cook on broil for 4 minutes. Remove from the oven and add the rest of the gorgonzola, green onions, cilantro and chives. Add the guac and serve!
