Chicken Avocado Arepas


Cali'flour Foods Flatbreads
3 tbsp olive oil
1 clove garlic crushed
1 c onions finely chopped
1 c bell pepper finely chopped
1 tsp salt
½ tsp pepper
1 tsp Sriracha or other hot sauce
3 ½ c shredded chicken cooked
1 c refried black beans
1-2 large avocados cut into cubes
Queso Fresco

    Chicken Avocado Arepas



    Preheat oven to 400 degrees with vented pan in the oven
    Take out pan and Spray with nonstick cooking spray
    Cook flatbreads for 10 minutes on vented pan
    Let cool for 5 minutes

      Arepa Toppings:

      In a medium saucepan over medium heat add olive oil, garlic, onions and bell pepper.
      Saute for 5-7 minutes, stirring occasionally.
      Add salt, pepper, Sriracha and shredded chicken. Cook until chicken is heated through.
      Fill each arepa with 2 tablespoons refried beans and ~½ cup of the chicken mixture. Repeat with remaining arepas.
      Serve stuffed arepas with avocado, queso fresco and cilantro.
