Beet and Goat Cheese Tart


1 Sweet Red Pepper Cali’flour Crust
3 cooked beets, thinly sliced
1 small red onion, diced and roasted
1 T pine nuts
2 T crumbled goat cheese
½ T thyme
½ T chives, minced
3 eggs
2 T sour cream
½ c milk
Dash of nutmeg
½ t salt
½ t pepper
1 T grated parmesan cheese

Beet and Goat Cheese Tart

Prepare Crust

Preheat oven to 375. Place semi thawed Cali’flour Crust into a tart pan. Cook about 5 min at 375 then remove from oven and set aside.

Prepare Tart

In the prepared tart shell, place beets, half the roasted onion, pine nuts and goat cheese. Whisk together eggs, sour cream, milk, nutmeg and salt & pepper. Pour egg mixture over other ingredients in tart. Bake at 375 for about 20 min or until set. Remove from oven. Let set, remove from tart pan, place on serving tray. Garnish with herbs, parmesan and remaining roasted onion. Serve and enjoy!
