Ingredients
1 Original Cali’flour Pizza Crust
1 6 oz sirloin steak (about 1 ½” thick)
1 t ghee
¼ c grated mozzarella cheese
1 T bleu cheese crumbles
½ c microgreens or torn lettuce leaves
Drizzle of balsamic vinegar
Salt and freshly ground black pepper
1 t minced fresh rosemary (optional)

Prepare Pizza Crust
Pre-bake the Cali’flour Crust as instructed in an oven at 375-400 on a vented pizza pan, pizza screen, or on a non-stick cookie sheet lined with parchment paper for 12-14 minutes. Remove from oven and let rest a minimum of 10 minutes.
Prepare Steak
On stovetop, heat a cast-iron skillet over med-high heat for 2 to 3 min so that pan is very hot. Season steak with salt and pepper on both sides. Add ghee to skillet and swirl to melt. Place steak in hot skillet. Cook for about 4 min without moving so that steak bottom is browned. Flip steak and cook for another 3 to 4 min (steak will be cooked rare to medium-rare). Transfer steak to a cutting board and let rest for 5 min, then thinly slice.
Prepare Pizza
Spread mozzarella cheese over prepared crust then add half of steak slices. Place in oven and bake on high broil for 5 min or until cheese is melted and the steak is cooked to preference. Remove from oven to rest. Scatter with microgreens and blue cheese. Salt and pepper to taste. Drizzle with balsamic vinegar and garnish with rosemary if using. Serve and enjoy!
