"I was diagnosed with Systemic Lupus Erythematosus in 2011, along with Rheumatoid Arthritis, Raynauds Phenomenon and Antiphospholipid Antibody Syndrome. I struggled to find my place at first with all these aliments. I was hospitalized with blood clots, and pericarditis (inflammation around my heart) I was in pain daily and suffering. In 2013 we moved to the Tampa area and I met a rheumatologist team who helped me. There were less medications involved and I was able to start exercising. The exercised help so much and it allow for me to also get things done around the house. I was losing weight and almost seemed back to my old self again. In 2015 a friend challenged me to run a half marathon and I started training. I went on to completed the half marathon and was completed hooked on running. I found that my relationship with the sugary gels was not all that it could be. I started research and found low carb options. I adopted a low carb lifestyle and saw a huge decrease in inflammation.
In 2016 I met my Joni. She introduced me to the ketogenic way of eating and it changed my life. I kept up with my low carb options and added healthy fats. The weight just fell off and I was more energetic and happier than ever. However it did not last. I started gaining again. Hormones started to play a huge role, because I was a woman in her forties. It was difficult but I was determined to win the fight. I purchased a high intensity interval program and invested in foods which were low carb, anti-inflammatory and had integrity. One of those foods were the ready made crusts from Cali'flour Foods. They gave me the flexibility to achieve my goal. I am half way there. I have combined road roaring with HIIT, meditation, acupuncture and yoga. It’s done wonders for my mental clarity and allowed me to lead a pain free life.
