Cinco de Mayo: Low Carb Fiesta

As if we needed another excuse to eat delicious food with friends and family. Cinco de Mayo and Taco Tuesday on the same day this year!? Can’t say we’re mad about it.  While your fiesta may be smaller with social distancing still in effect, we thought it’d be helpful to list some of our favorite low carb Mexican dishes for those of you looking for healthier alternatives for your Cinco de Mayo menu.  


We’ve got you covered when it comes to taco inspo. From breakfast through dessert, try one of these Mexican-inspired dishes for your next low carb meal. 

Breakfast Flatbread Tacos: Buenos Días, indeed. Start your day off with these open-face veggie tacos topped with a fried egg.  
Chicken Tacos with Summertime Salsa: Watermelon salsa finishes off these yummy chicken tacos.  
Cali’Chicken Tacos: It doesn’t get any easier than this. You only need four ingredients to make these chicken tacos using our flatbreads!   
Apple Pie Tacos: Apple pie isn’t exactly a churro, BUT we couldn’t help but include these oh-so-delicious tacos. Dos manos required! 


What do these meals have in common? They’re all low-carb and keto-friendly alternatives to some of our Mexican favorites. Olé! 

Breakfast Tostadas: Start your morning off right with this tasty breakfast. Warm beans, crispy bacon, fresh eggs and avocado. Need we say more?  
Breakfast Taquitos: Like your eggs scrambled instead of fried? Try these taquitos stuffed with all your favorite veggies.  
Taco Salad: Our Spicy Jalapeño Crusts are the base for this flavor-packed taco salad.  
Low Carb Nachos: Sub tortilla chips for our crusts cut into triangles. Top with cheese, pico de gallo, jalapeños and your favorite protein.  
Cauliflower Queso & Cali’flour Crisps: Looking for a cheese substitute? Try this queso made from roasted cauliflower.


Low Carb Margarita Mix: Our friends at Tasty Low Carb share their version of the ultimate skinny margarita. 
Keto Margarita: They say you can enjoy this margarita without the guilt. Count us in.  
Low Carb Spicy Margarita: For those of you who like a little heat in your drink, try this spicy margarita with a chili-salt rim.  
Agua Fresca: Looking for an alcohol-free drink? Try an agua fresca made with the fruit of your choice! Our favorite is watermelon.
